Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

    Prepare the Ingredients

    Core tomatoes and cut into ½" dice.

    Start the Meal

    Place slow cooker liner in slow cooker, if desired. Fold top edges in before putting on lid. Combine enchilada sauce and salsa in a clean slow cooker. Crumble ground turkey and add to slow cooker. Top with seasoning blend and ¼ the cheese (reserve remaining for topping). Turn slow cooker on to high heat. Cover, and cook until turkey reaches a minimum internal temperature of 165 degrees, 3 ½ hours.

    Add the Beans, Corn, and Topping

    After 3 ½ hours, drain beans. Stir beans, corn, and 1 tsp. salt into slow cooker. Top turkey-bean mixture with two tortillas and ¼ the cheese. Repeat tortilla and cheese layering two more times, ending with cheese. Cover with lid and continue cooking until cheese is melted, 30 minutes.
