Prepare your ingredients, place them in the cooker, and then live your best life for hours and hours, while the scrumptiousness builds and your dinner slowly cooks. Plus, we're giving you enough for leftovers. Groovy.

You Will Need
Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
Steak and Pork 145° F (rest cooked meat, 3 minutes) |
Seafood 145° F |
Chicken 165° F |
Ground Beef 160° F |
Ground Turkey 165° F |
Ground Pork 160° F
Prepare the Ingredients
Core tomatoes and cut into ½" dice.
Start the Meal
Place slow cooker liner in slow cooker, if desired. Fold top edges in before putting on lid.
Combine enchilada sauce and salsa in a clean slow cooker. Crumble ground turkey and add to slow cooker. Top with seasoning blend and ¼ the cheese (reserve remaining for topping).
Turn slow cooker on to high heat. Cover, and cook until turkey reaches a minimum internal temperature of 165 degrees, 3 ½ hours.
Add the Beans, Corn, and Topping
After 3 ½ hours, drain beans.
Stir beans, corn, and 1 tsp. salt into slow cooker.
Top turkey-bean mixture with two tortillas and ¼ the cheese. Repeat tortilla and cheese layering two more times, ending with cheese.
Cover with lid and continue cooking until cheese is melted, 30 minutes.
