Before You Cook
Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |

- Ground Turkey 165° F |

1 Prepare the Ingredients
Drain tofu. Line a plate with paper towels. Cut tofu into 1/4-1/2" cubes. Place on towel-lined plate. Top with paper towels, then press gently but firmly to remove excess moisture.
Core tomato and cut into 1/4" dice.Hold romaine heart at root end and chop coarsely. Drain beans.Mince garlic. -
2 Cook the Beans
Place a small pot over medium heat and add 2 tsp. olive oil. Add garlic to hot pot and stir occasionally until fragrant, 30-60 seconds.
Add beans, half the fiesta seasoning (reserve remaining for tofu), and 1/4 cup water. Stir occasionally until beans are heated through, 4-5 minutes.Remove from burner. Mash beans until mostly smooth. Cover and set aside.While beans cook, continue recipe. -
3 Cook the Tofu
Season tofu with remaining fiesta seasoning. Line another plate with a paper towel.
Place a large non-stick pan over medium-high heat and add 2 Tbsp. olive oil. Add tofu to hot pan and stir occasionally until golden-brown, 6-8 minutes.Remove from burner. Transfer tofu to towel-lined plate and season with 1/4 tsp. salt.Wipe pan clean and reserve. -
4 Assemble the Burritos
Wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds.
If tortillas come folded, keep folded.Place tortillas on a clean work surface.Add bean mixture to tortilla, then cheese, tofu, salsa (to taste), chipotle crema, lettuce, and tomatoes. Add fillings to taste; you may have filling leftover.Fold sides of tortilla toward center, then roll bottom edge towards the top, enclosing sides tightly. -
5 Cook Burritos and Finish Dish
Return pan used to cook tofu to medium heat and spray with cooking spray. Add burritos, seam-side down, to hot pan. Cook until golden-brown, 3-4 minutes per side.
Remove from burner.Plate dish as pictured on front of card, halving burrito, if desired. Bon appétit!
