Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

1 Prepare the Ingredients
Hold romaine heart at root end and slice into thin strips.
Drain tofu. Line a plate with paper towels. Cut into 1" dice. Place tofu on towel-lined plate. Top with paper towels, pressing gently but firmly to remove excess moisture. Season all over with taco seasoning and a pinch of salt. -
2 Cook the Tofu Mixture
Place a large non-stick pan over medium heat and add 1 Tbsp. olive oil. Add tofu to hot pan. Cook undisturbed, 2 minutes.
Stir occasionally until tofu is golden-brown all over, 6-8 minutes.Don't rush cooking the tofu; it will need the complete cooking time for the correct crispness.Remove from burner. Stir in pesto (to taste) until coated.While tofu cooks, continue recipe. -
3 Make the Crema
In a mixing bowl, combine sour cream, lemon juice, and a pinch of salt. Set aside.

4 Heat Tortillas and Finish Dish
Wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds.
If tortillas come folded, keep folded. Carefully remove from microwave.Plate dish as pictured on front of card, filling tortillas with tofu and topping with romaine, cheese, and crema. Bon appétit!
