But Baja is also about tacos; mostly fish tacos, which we've modified here for our vegetarian friends. Crispy tofu is placed in tortillas with crunch, spicy vegetables, crumbly cheese, and cool sour cream. Bring the Baja closer to home, if not the sand and sea.

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |

  • Ground Turkey 165° F |

    Prepare the Tofu

    Line a plate with a paper towel.

    Cut tofu into 1/2" dice and place on towel-lined plate.

    Top with paper towels, top with another plate, and place a heavy object on plate to remove excess moisture.

    Allow tofu to press for at least 5 minutes.

    While tofu presses, prepare ingredients.

    Prepare the Ingredients

    Halve and peel shallot. Slice halves into very thin strips.

    Stem jalapeño, remove seeds and ribs, and slice into very thin strips. Be sure to wash hands, utensils, and cutting board after working with jalapeño.

    Mince cilantro (no need to stem).

    Halve lime and juice.

    Combine shallot, jalapeño, lime juice, and a pinch of salt and pepper in a mixing bowl. Set aside for at least 10 minutes.

    Cook the Tofu

    Place tofu, cornstarch, and a pinch of salt and pepper in another mixing bowl. Toss to thoroughly combine.

    Place a large non-stick pan over medium-high heat and add 3 Tbsp. olive oil. Add tofu to hot pan and stir occasionally until golden brown, 6-8 minutes.

    Wipe mixing bowl clean.

    Add crisped tofu and seasoning blend to mixing bowl and toss to combine.

    Warm the Tortillas

    Wrap tortillas in a damp paper towel and microwave, 30 seconds.

    Finish the Dish

    Plate dish as pictured on front of card, filling tortillas with tofu and topping with pickled jalapeño and shallot (to taste), cheese, and sour cream. Garnish with cilantro. Bon appétit!
