Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

If using antibiotic free chicken, follow same instructions.

If using filets mignon or sirloin steaks, pat dry. Add steaks to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using salmon, pat dry. Add salmon, skin-side up first to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until salmon reaches minimum internal temperature, 4-6 minutes per side.

1 Prepare the Ingredients
Add cream cheese and half the buttermilk-dill seasoning (reserve remaining for mashed potatoes) to a microwave-safe bowl. Microwave until slightly softened, 10-15 seconds.
Carefully remove from microwave and stir to combine.Pat chicken dry.Place chicken in one provided tray. Top evenly with cream cheese mixture, then shredded cheese.Place poblanos (to taste) in second provided tray. Spread into an even layer. -
2 Start the Meal
Bake poblanos uncovered in hot oven, 10 minutes.
Bake chicken uncovered in hot oven until chicken reaches a minimum internal temperature of 165 degrees, 20-25 minutes.Carefully remove poblanos tray from oven. Add mashed potatoes and remaining buttermilk-dill seasoning to tray. Vigorously stir to combine and push to one side of tray. Tray will be hot! Use a utensil.Add corn to empty side of tray. -
3 Finish the Meal
Bake poblano mashed potatoes and corn uncovered in hot oven until heated through, 5-7 minutes.
Carefully remove both trays from oven. Stir softened butter into corn.To serve, garnish chicken with crispy jalapeños (to taste). Slice chicken, if desired. Bon appétit!
