If using 20 oz. ground beef, follow same instructions as 10 oz. ground beef, forming four evenly-sized patties and stacking two to serve.

If using ground pork, follow same instructions as ground beef in Steps 2 and 4, cooking until pork reaches minimum internal temperature, 4-6 minutes per side.

If using ground turkey, follow same instructions as ground beef in Steps 2 and 4, cooking until turkey reaches minimum internal temperature, 6-8 minutes per side.

1 Start the Potatoes
Cut potatoes into 1/2" rounds.
Place potatoes on prepared baking sheet and toss with 1 tsp. olive oil and 1/4 tsp. salt. spread into an even layer.Roast in hot oven until browned, 15-20 minutes, flipping once halfway through.While potatoes roast, continue recipe. -
2 Prepare Ingredients and Toast Buns
Place a medium non-stick pan over medium-high heat. Add buns to hot, dry pan and toast until browned, 1-2 minutes.
Remove from burner. Transfer to a plate. Reserve pan; no need to wipe clean.While buns toast, mince chives.Peel and slice shallots into very thin rounds. In a mixing bowl, combine shallots and flour.In another mixing bowl, combine ground beef, 1/4 tsp. salt, and a pinch of pepper. Form into two evenly-sized patties, about 5" in diameter. -
3 Fry the Shallots
Line a plate with a paper towel.
Return pan used to toast buns to medium-high heat and add 1 Tbsp. olive oil.Working in batches if necessary, add shallots to hot pan and fry until golden-brown, 2-3 minutes.Remove from burner. Transfer shallots to towel-lined plate. Wipe pan clean and reserve. -
4 Cook the Burgers
Return pan used to fry shallots to medium-high heat. Add patties to hot, dry pan.
Cook until lightly charred and ground beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes per side.Remove from burner. Transfer to a plate. -
5 Finish Potatoes and Finish Dish
After 15-20 minutes, carefully remove potatoes from oven. Top with cheese and bacon.
Roast again in hot oven until cheese melts and bacon crisps, 3-5 minutes.Carefully remove from oven.Plate dish as pictured on front of card, topping bottom bun with patty, aioli, fried shallots, arugula, and top bun. Garnish potatoes with chives. Bon appétit!
