1 Roast the Fries
Cut potatoes into 1/4" fries and pat dry.
Place fries on prepared baking sheet and toss with 1 Tbsp. olive oil, potato spice seasoning, and a pinch of salt and pepper. Spread into an even layer.Roast in hot oven until slightly browned, 35-40 minutes, tossing once halfway through.Carefully remove from oven.While fries roast, continue recipe. -
2 Form the Patties
In a mixing bowl, thoroughly combine ground pork, amarillo seasoning, chimichurri seasoning, and a pinch of salt and pepper. Form pork mixture into 8 equally-sized patties, 3" across.

3 Cook the Patties
Summertime, and the grilling is easy! To grill this burger, heat grill to medium. Follow same instructions, grilling until browned and pork reaches a minimum internal temperature of 160 degrees, 3-5 minutes per side.
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.Add patties to hot pan. Cook until slightly charred and patties reach a minimum internal temperature of 160 degrees, 3-5 minutes per side.Evenly top patties with both cheeses and add 1 Tbsp. water. Cover and cook until melted, 1-2 minutes.Remove from burner.While patties cook, continue recipe. -
4 Heat the Buns
Heat buns to your preference using a toaster or microwave.
Alternatively, place buns directly on rack in hot oven, cut-side up. Toast until lightly browned, 3-4 minutes.While buns heat, continue recipe. -
5 Prepare Pickles and Finish Dish
Drain pickles and pat dry, then coarsely chop.
Plate dish as pictured on front of card, spreading bottom bun with mustard (to taste) and spreading top bun with mayonnaise. Top bottom bun with patty, pickles, then top bun. Bon appétit!
