If using diced chicken breasts, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes.

1 Prepare the Ingredients
Pat shrimp dry.
In provided tray, combine shrimp, bell peppers, and 2 tsp. olive oil. Spread into an even layer. -
2 Bake the Meal
Bake uncovered in hot oven until bell peppers are tender and shrimp reach a minimum internal temperature of 145 degrees, 20-25 minutes.
While meal bakes, continue recipe. -
3 Toast Flatbreads, Make Crema, and Finish Meal
Place flatbreads directly on oven rack. Bake in hot oven until slightly toasted, 6-8 minutes.
Carefully remove from oven.While flatbreads toast, in a mixing bowl, combine remoulade, creme fraiche, and relish. Set aside.After 20-25 minutes, carefully remove tray from oven and drain any excess liquid. Tray will be hot! Use caution.Stir in Cajun seasoning (to taste) and half the crema (reserve remaining for garnish) until combined. Tray will be hot! Use a utensil.To serve, fill flatbreads with shrimp mixture (to taste) and spring mix. Garnish with remaining crema. Bon appétit!
