Prepare The Ingredients
Cut broccoli into bite-sized pieces.
Crush butter crackers
Cook The Broccoli
Place a large non-stick pan over medium heat and add 2 tsp. olive oil. Add broccoli and half the garlic salt to hot pan. Cover and cook, stirring occasionally, until tender, 6-8 minutes.
While broccoli cooks, prepare the pork.
Cook The Pork
Pat pork medallions dry, and season both sides with half the bagel seasoning, remaining garlic salt, and a pinch of salt and pepper.
"Place a medium non-stick pan over medium heat and add butter until melted.
Add pork medallions to hot pan and cook undisturbed until well-browned, 3-5 minutes per side. Transfer to prepared baking sheet and top evenly with parmesan, remaining bagel seasoning, and butter crackers. Set until broiler until cheese is melted and pork reaches a minimum internal temperature of 145 degrees, 2-4 minutes.
