Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using filets mignon, sirloin steaks, or NY strip steak, follow same instructions as chicken in Steps 1 and 4, cooking until steaks reach desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

    Prepare the Ingredients

    Break broccoli into bite-sized pieces.

    Trim and thinly slice green onions on an angle, keeping white and green portions separate.

    Pat chicken dry and season both sides with "Everything Bagel" seasoning and a pinch of salt.

    Cook the Broccoli

    Place a large non-stick pan over medium heat and add 1 tsp. olive oil. Add white portions of green onions, broccoli, and 1/4 cup water to hot pan. Cover and cook until water is almost completely evaporated, 4-6 minutes.

    Uncover and stir occasionally until tender, 2-3 minutes.

    Season broccoli with 1/4 tsp. salt and garlic pepper.

    Remove from burner. Transfer broccoli to prepared casserole dish. Wipe pan clean and reserve.

    Make the Gratin

    Return pan used to cook broccoli to medium heat. Add cream base and half the cheese (reserve remaining for topping). Stir often until cheese melts, 2-3 minutes.

    Remove from burner.

    Top broccoli with sauce and remaining cheese. Wipe pan clean and reserve.

    Roast broccoli in hot oven until cheese melts, 5-7 minutes.

    Carefully remove from oven.

    While gratin bakes, continue recipe.

    Cook the Chicken

    Return pan used to make sauce to medium heat and add 1 tsp. olive oil. Add chicken to hot pan and cook until browned and chicken reaches a minimum internal temperature of 165 degrees, 5-7 minutes per side.

    Remove from burner. Transfer chicken to a plate and tent with foil.

    Make Crème Fraîche Sauce and Finish Dish

    In a microwave-safe bowl, combine 1 Tbsp. water and crème fraîche. Microwave uncovered, 30 seconds.

    Carefully remove bowl from microwave. Add green portions of green onions and stir to combine.

    Plate dish as pictured on front of card, topping chicken with crème fraîche sauce and garnishing broccoli gratin with crispy onions. Bon appétit!
