To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using antibiotic free chicken breasts, follow same instructions.

1 Prepare Ingredients and Make Cheese Filling
Coarsely chop pistachios.
Stem and coarsely chop mint.Using a sharp knife, slice ends off orange. Place orange, one cut-side down, on cutting board. Following the shape of the orange, slice downward to remove peel and white bits underneath (pith). Halve orange lengthwise, then cut into 1/4" half-moons.Trim ends off beets, peel, and cut into 1/4" half-moons. Beets are delicious, but tend to stain. Save beets for the end when preparing ingredients, and clean your cutting board after preparing.In a mixing bowl, combine 2/3 the feta (reserve remaining for garnish) and cream cheese. Set aside. -
2 Roast the Beets
Place beets on prepared baking sheet. Toss with 1 tsp. olive oil and 1/4 tsp. salt. Spread into a single layer.
Roast in hot oven until fork-tender, 18-22 minutes.Carefully remove from oven. Transfer beets to a plate. Let cool, at least 5 minutes.While beets roast, continue recipe. -
3 Stuff the Chicken
Want a shortcut? Skip cutting and stuffing. Reserve filling, season chicken, and skip to step 4.
Pat chicken dry and place on a clean cutting board. Hold knife blade parallel to the board and carefully make a lengthwise cut through the center of the meat, using your free hand to steady meat. Stop short of opposite edge so chicken remains in one piece. Open meat as you would a book.Divide cheese filling evenly between chicken, placing in center. Fold chicken in half over filling. Season both sides with za'atar seasoning and 1/4 tsp. salt. -
4 Cook the Chicken
Place a medium oven-safe non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add chicken to hot pan. Cook until browned, 2-3 minutes per side.Remove from burner.If you skipped stuffing in step 3, top chicken evenly with cheese filling. Pan will be hot! Use caution.Transfer chicken in pan to hot oven and roast until chicken reaches a minimum internal temperature of 165 degrees, 10-12 minutes.Carefully remove from oven. Pan handle will be hot! Use an oven mitt.While chicken roasts, continue recipe. -
5 Assemble Salad and Finish Dish
Once beets are cool enough to handle, combine vinaigrette, honey, beets, and oranges in another mixing bowl.
Plate dish as pictured on front of card, topping arugula with beet and orange salad, pistachios, mint, and remaining feta. Bon appétit!
