Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

- Ground Turkey 165° F |

If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using shrimp, pat dry. Cook until pink and shrimp reach minimum internal temperature, 2-3 minutes per side.

1 Roast the Fries
Cut potatoes into 1/4" fries and pat dry.
Place fries on prepared baking sheet and toss with 4 tsp. olive oil, 1/4 tsp. salt, chile and cumin rub, and a pinch of pepper. Spread into a single layer.Roast in hot oven until slightly browned and tender, 25-30 minutes, tossing fries halfway through.Carefully remove from oven.While fries roast, continue recipe. -
2 Coat the Chicken
Pat chicken dry and season all over with a pinch of pepper.
In a mixing bowl, combine tempura mix, half the fiesta seasoning (reserve remaining for panko), and 1/4 cup water until a pancake-like batter forms.If too thick, add additional water, 1 Tbsp. at a time, until desired consistency is reached.Transfer chicken to bowl with tempura batter and stir until coated. -
3 Bread the Chicken
Combine panko and remaining fiesta seasoning on a plate. Spread into a single layer.
Working in batches, transfer chicken to plate with panko mixture, pressing gently to adhere all over. Rest, 3 minutes. -
4 Cook the Chicken
Line another plate with a paper towel.
Place a medium non-stick pan over medium heat and add canola oil. Let oil heat, 5 minutes.After 5 minutes, test oil temperature by adding a pinch of tempura batter to it. It should sizzle gently. If it browns immediately, turn heat down and let oil cool. If it doesn't brown, increase heat.Working in batches, carefully add chicken to hot oil. Cook until golden-brown and chicken reaches a minimum internal temperature of 165 degrees, 1-3 minutes per side.To use an air fryer, place chicken in basket in an even layer and generously spray with cooking spray. Air fry at 375 degrees until panko is crisp and chicken reaches a minimum internal temperature of 165 degrees, 12-15 minutes, flipping and spraying with cooking spray halfway through.Remove from burner. Transfer chicken to towel-lined plate.While chicken cooks, continue recipe. -
5 Make Cheese Sauce and Finish Dish
In a microwave-safe bowl, combine half the salsa (to taste; remaining is yours to use as you please!), creme fraiche, 2 Tbsp. water, and a pinch of salt and pepper. Microwave uncovered until creme fraiche is melted, 30-60 seconds.
Carefully remove from microwave and stir in cheese until combined.Microwave again uncovered until heated through, 30-60 seconds.Carefully remove from microwave and stir to combine.Plate dish as pictured on front of card, serving cheese sauce (to taste) and dressing (to taste) on the side for dipping.
