It is full on gardening time here in Chicago. Instead of killing this healthy dish with a mayonnaise based dressing, we opted for a bleu cheese vinaigrette. You still get the great taste of steak and blue cheese with the addition of spicy red radish, sweet tomatoes and crispy mini cucumbers. Build your salad, then add the sliced steak to the top and dig in. You could also opt for a chilled steak salad and put the seared meat in the fridge ahead of time, then mix everything right before serving.
