To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using antibiotic free chicken, follow same instructions.

1 Roast the Carrots
Place 2/3 the butter (reserve remaining for glaze) in a microwave-safe bowl. Microwave uncovered until melted, 20-30 seconds.
Carefully remove from microwave. Set aside.Peel, trim, and cut carrots into 1/4" slices on an angle. If carrot is larger than 1" in diameter, halve before slicing. Want to impress your guest? Turn the carrots 90 degrees after each slice to create an oblong shape.Place carrots on prepared baking sheet. Toss with melted butter and half the garlic salt (remaining is yours to use as you please!). Spread into a single layer. Reserve microwave-safe bowl; no need to wipe clean.Roast carrots in hot oven until slightly browned and tender, 16-20 minutes, tossing once halfway through.Carefully remove from oven.While carrots roast, continue recipe. -
2 Prepare the Ingredients
Finely chop pistachios.
In a mixing bowl, combine goat cheese, grated cheese, a pinch of salt, and garlic and parsley seasoning. Set aside.Pat chicken dry. Lay chicken on a clean cutting board. Hold knife blade parallel to the board and carefully make a lengthwise cut through the center of the meat, using your free hand to steady meat. Stop short of opposite edge so chicken remains in one piece. Open meat as you would a book.Evenly divide cheese filling between chicken, placing in center. Fold chicken in half over filling. Season both sides with 1/4 tsp. salt and a pinch of pepper.Want a shortcut? Skip cutting and stuffing. Reserve filling, season chicken, and skip to step 3. -
3 Cook the Chicken
Place a medium oven-safe non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add chicken to hot pan. Cook until browned, 2-3 minutes per side.Remove from burner.If you skipped stuffing in step 2, top chicken evenly with filling.Transfer pan to hot oven and roast until chicken reaches a minimum internal temperature of 165 degrees, 10-12 minutes.Carefully remove from oven. Pan handle will be hot! Use an oven mitt.While chicken cooks, continue recipe. -
4 Heat the Glaze
Place balsamic glaze in reserved bowl and cover with a damp paper towel.
Microwave covered until heated through, 20-30 seconds.Carefully remove from microwave and stir in remaining butter until combined. Set aside. -
5 Assemble Salad and Finish Dish
In another mixing bowl, combine lemon juice, 2 tsp. olive oil, a pinch of salt, and arugula.
Plate dish as pictured on front of card, topping chicken with glaze. Garnish carrots with pistachios and honey. Bon appétit!
