If using NY strip steak, leave puff pastry whole. Follow same instructions as chicken in Steps 1, 3, and 4, searing undisturbed until browned on one side, 2-3 minutes, then transferring steak to baking sheet, seared side up. Add topping, wrap with whole puff pastry sheet, and bake in hot oven until pastry is golden brown and steak reaches minimum internal temperature, 10-12 minutes. Rest, 3 minutes. Halve to serve.
