Prepare The Ingredients
Preheat oven to 425 degrees. Thoroughly rinse any fresh produce and pat dry. Add broccoli, peppers, 1 tsp olive oil, and garlic salt to provided tray and toss to combine. Bake in a hot oven for 10 minutes.
Carefully remove tray from oven.Push vegetables to one side.
Mix ground beef, garlic, saltines, mayo, and a pinch of salt and pepper in a mixing bowl until completely combined. Form into eight equally-sized meatballs. Add to empty side of tray.
Make The Sauce and Finish The Dish
Bake in a hot oven until vegetables are tender and beef reaches a minimum internal temperature of 160 degrees, 20-25 minutes.
Add marinara, capers, and 1 tablespoon water to a microwave safe bowl until completely combined. Cover and microwave on high for 20-30 seconds.
Carefully remove from oven and top vegetables with grated parmesan. Bon appétit!"
