Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Customize It Instructions

If using 16 oz. Italian sausage, follow same instructions as 8 oz. Italian sausage, forming 40-50 small meatballs and working in batches, if necessary. For an easier preparation, add sausage to pot and break into bite-sized pieces as it cooks.

If using ground beef, roll often and cook until beef reaches minimum internal temperature, 4-6 minutes.

If using ground turkey, roll often and cook until turkey reaches minimum internal temperature, 6-8 minutes.

If using Impossible burger, roll often and cook until burger reaches a minimum internal temperature of 160 degrees, 4-6 minutes.

1 Cook the Orzo
Once water is boiling, add orzo and cook until al dente, 4-5 minutes.
Remove from burner. Drain in a wire-mesh strainer and set aside. Reserve pot; no need to wipe clean.While orzo cooks, continue recipe. -
2 Prepare the Ingredients
Cut ciabatta halves into four triangles.
Trim ends off celery and cut into 1/4" dice.Stem kale and coarsely chop.Halve and peel onion. Cut halves into 1/4" dice. -
3 Form and Cook the Meatballs
Remove Italian sausage from casing, if necessary. Form sausage into 20-25 bite-sized meatballs. For an easier preparation, add sausage to pot and break into bite-sized pieces as it cooks.
Return pot used to cook orzo to medium-high heat. Working in batches if necessary, add 2 tsp. olive oil and meatballs to hot pot. Roll often until no pink remains and sausage reaches a minimum internal temperature of 160 degrees, 4-6 minutes.Transfer meatballs to a plate. Keep pot over medium-high heat. -
4 Cook the Soup
Add 2 tsp. olive oil, onions, celery, and carrots to hot pot. Stir to combine, scraping any bits from bottom of pot. Stir occasionally until beginning to soften, 5-7 minutes.
Stir in 3 cups water, chicken base, mirepoix base, and kale. Bring to a simmer.Once simmering, add meatballs. Cover and cook until vegetables are tender, 8-10 minutes.Remove from burner. Stir in 1/4 tsp. salt and orzo until combined.While soup cooks, continue recipe. -
5 Bake Garlic Bread and Finish Dish
Spread butter evenly on ciabatta. Place ciabatta on prepared baking sheet.
Bake in hot oven until golden-brown, 5-7 minutes.Plate dish as pictured on front of card, serving garlic bread on the side. Bon appétit!
