In a mixing bowl combine ground beef, asian ginger garlic seasoning, saltine crumbs, mayo, and ¼ tsp salt. Mix till combined and smooth. Form into 2 even foot ball shapes and place on prepared baking sheet.

Place a medium non-stick pan over medium heat and add 1 Tbsp. olive oil. Add broccoli and 1 Tbsp. water to hot pan. Cover, and cook until water is almost completely evaporated, 5 minutes. Uncover, and stir occasionally until tender, 2-3 minutes. Remove cover and season with a ¼ tsp salt and pinch of pepper.
Wipe broccoli pan clean and place over medium high heat. Add 4 tsp oil to hot pan. Add mushrooms in an even layer, not crowding pan. Leave undisturbed for 1 min, then shake pan. Repeat this 3 times till edges are golden brown and crispy. Carefully remove shiitakes and rest on paper towel lined plate. Season while still warm with a pinch of salt.

Carefully remove meatloaves from hot oven. Top with ½ BBQ sauce and put back in hot oven till sauce is warmed through, 5-6 min.
