You Will Need
Large Non-Stick Pan
Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Start the Orzo
Once water is boiling, add orzo and stir occasionally until soft, 7-8 minutes.
Reserve 1 cup orzo cooking water. Strain orzo and set aside.
While orzo cooks, cook zucchini.
Cook the Zucchini and Chicken
Heat 2 tsp. olive oil in a large non-stick pan over medium-high heat.
Finely chop zucchini.
Add zucchini to hot pan and stir occasionally until tender, 4-5 minutes.
Add ground chicken. Break up chicken until no pink remains and chicken reaches a minimum internal temperature of 165 degrees, 7-9 minutes.
Finish the Orzo
Add butter, lemon juice, seasoning blend, mirepoix base, and reserved orzo water to hot pan. Stir constantly until combined and thickened, 2-3 minutes.
Stir in orzo and Parmesan until combined.
Tear spinach into small pieces. Add spinach to hot pan and stir until wilted, 1-2 minutes.
Remove from burner.
