Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

    Prepare the Ingredients

    Place tomatoes and peppers in blender. Pulse until vegetables are a fine dice.

    Combine yogurt and guacamole in a mixing bowl.

    Line a plate with a paper towel. Cut tofu into 1" dice and place on towel-lined plate. Top with paper towels, then press gently but firmly to remove excess moisture.

    Make the Dish

    Place a large non-stick pan over medium-high heat. Add rice, corn, blended peppers and tomatoes and 2 Tbsp. water to hot pan. Stir occasionally until peppers are soft and the rice is heated through, 5-7 minutes.

    Add tofu to hot pan and stir occasionally until heated through, 3-4 minutes.

    Remove from burner.

    Plate dish as pictured on front of card, garnishing rice bowl with guacamole-yogurt mixture. Bon appétit!
