Beurre blanc means "white butter" in French, but you can tell that already; just look the way the creamy sauce enrobe the tender, flaky fish. You can also tell, just by looking, how amazingly juicy slash crunchy those tomatoes are, crispy good. The green of the fresh broccoli is also especially beautiful. Seems like we don't even need this description; the picture tells 1,000 words.

Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Prepare Ingredients
Mince shallot. Cut broccoli into bite sized pieces. Halve roma tomato and scoop out seeds with a spoon. Cut mahi into third and season with pinch of salt and pepper.

2 Make the tomatoes
Place ½ the butter (reserve remaining for sauce) in a microwave-safe bowl. Microwave until melted, 30 seconds. Divide cheese-breadcrumb mixture evenly between tomatoes. Drizzle melted butter evenly over tomatoes.

3 Roast broccoli and tomatoes
Place broccoli and broccoli on prepared sheet pan and roast 12-15 minutes or until broccoli is tender and bread crumbs are lightly browned.

4 cook mahi
Place a medium non-stick pan over medium heat and add 1 tsp. olive oil. Add mahi-mahi to hot pan. Cook until mahi-mahi reaches desired doneness (medium-rare to well-done), 2-4 minutes per side for medium. Consuming raw or undercooked mahi-mahi may increase your risk for food-borne illness.

5 Make sauce
Wipe pan clean and return to heat with 2 tsp olive oil. Add shallot to pan and cook 1-2 minute or until tender. Add white wine and reduce by half. Swirl in remaining butter. Heat rosee sauce in microwave 1-2 minutes and pour over broccoli.
