If using chicken breasts, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon, pat dry. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using salmon, pat dry. Add salmon, skin-side up first, and cook until salmon reaches minimum internal temperature, 4-6 minutes per side.

1 Prepare Ingredients and Toast Almonds
Place a large non-stick pan over medium heat and add 1 tsp. olive oil. Add almonds to hot pan. Stir constantly until golden-brown, 1-2 minutes.
Remove from burner and transfer almonds to a plate. Wipe pan clean and reserve.While almonds toast, trim green beans, if necessary.Pat mahi-mahi dry. Halve any larger pieces to match smaller pieces. Season all over with 1/4 tsp. salt, then season one side with garlic pepper. -
2 Cook the Green Beans
Return pan used to toast almonds to medium-high heat and add 2 tsp. olive oil. Add green beans to hot pan and cook, 1 minute.
Add 1/4 cup water and a pinch of salt and pepper. Cover, and cook until tender, 6-8 minutes.If green beans need more time, add 2 Tbsp. water, cover, and stir occasionally, 1-3 minutes.Remove from burner and stir in half the lemon juice (reserve remaining for sauce) and garlic salt.While green beans cook, continue recipe. -
3 Cook the Mahi-Mahi
Place a medium non-stick pan over medium heat and add 1 tsp. olive oil.
Add mahi-mahi, garlic pepper-side down first, to hot pan. Cook until mahi-mahi reaches a minimum internal temperature of 145 degrees, 3-4 minutes per side.Fish thickness can vary; if you receive a thinner fillet, we recommend checking for doneness sooner.Remove from burner. -
4 Make Beurre Blanc and Finish Dish
Place butter in a microwave-safe bowl. Microwave uncovered until melted, 30-60 seconds, stirring once halfway through.
Carefully remove bowl from microwave. Stir in crème fraîche, remaining lemon juice, and 1 Tbsp. water until smooth.Plate dish as pictured on front of card, topping mahi-mahi with beurre blanc and garnishing green beans with cheese and toasted almonds. Bon appétit!
