    Microwave Instructions

    Thoroughly rinse any fresh produce and pat dry. Drain beans. Combine poblano, corn, beans, 1/4 tsp. salt, and 1 tsp. olive oil in provided tray. Cover tray with a damp paper towel. Microwave until pepper is tender, 3-5 minutes. Carefully remove tray from microwave. Combine enchilada sauce, chicken base, and flour in a mixing bowl. Break up pork and add pork, seasoning blend, 1 cup water, and enchilada sauce mixture over vegetables. Stir to combine. Microwave again uncovered until bubbling and sauce has thickened enough to coat the back of a spoon, 2-3 minutes. Carefully remove from microwave. To serve, top with sour cream and cheese.     Oven Instructions

    Turn oven on to 375 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry. Drain beans. Combine poblano, corn, beans, 1/4 tsp. salt, and 1 tsp. olive oil in provided tray. Place tray on baking sheet. Bake uncovered in hot oven until pepper is tender, 10-15 minutes. Carefully remove tray from oven. Combine enchilada sauce, chicken base, and flour in a mixing bowl. Break up pork and add pork, seasoning blend, 1 cup water, and enchilada sauce mixture over vegetables. Stir to combine. Bake again uncovered in hot oven until bubbling and sauce has thickened enough to coat the back of a spoon, 15-17 minutes. Carefully remove from oven. To serve, top with sour cream and cheese.
