Prepare The Ingredients
Cut broccoli into bite-sized pieces
Roast The Broccoli
Place broccoli on prepared baking sheet. Toss with 2 tsp olive oil and garlic salt and spread into a single layer. Roast in hot oven until browned and fork-tender, 14-16 minutes.
While broccoli roasts, prepare the meatloaves.
Prepare The Meatloaves
"Finely crush saltine crackers.
Thoroughly combine ground pork, crushed crackers, mayonnaise, ¼ tsp. salt, and ¼ tsp. pepper in a mixing bowl.
Form ground beef mixture into two equally-sized ovals."
Place a medium non-stick pan over medium-high heat and add 1 tsp. olive oil. Add meatloaves to hot pan and sear until browned on two "sides", 2-3 minutes per side. Transfer meatloaves to prepared baking sheet and top with cheese. Roast in hot oven until meatloaves reach a minimum internal temperature of 160 degrees, 8-10 minutes.
Reserve pan; wipe clean.
Make The Sauce
In the same pan over medium heat, add apple cider, honey, mustard, demi-glace, and a pinch of salt. Stir to combine, then cook until liquid is reduced by half, 1-2 minutes. Add butter, one piece at a time, and stir until each piece is combined. Remove from burner.
