1 Prepare the Ingredients
Remove stem, seeds, and ribs, and cut bell pepper into 1/4" dice.
Drain black beans. -
2 Cook the Turkey
Place a large oven-safe non-stick pan over medium-high heat and add 2 tsp. olive oil. Add ground turkey, peppers, and taco seasoning to hot pan. Break up meat until no pink remains and turkey reaches a minimum internal temperature of 165 degrees, 7-9 minutes.
Remove from burner and transfer turkey mixture to a plate. Wipe pan clean and reserve. -
3 Cook the Rice and Beans
Carefully massage rice in bag to break up any clumps. Remove rice from packaging.
Return pan used to cook turkey to medium heat. Add 2 tsp. olive oil, rice, garlic salt, and beans to hot pan. Stir occasionally until rice is heated through, 3-5 minutes.Remove from burner. -
4 Add the Turkey Mixture and Cheese
Flatten rice and beans to form an even layer in pan.
Top rice mixture evenly with turkey mixture, then top evenly with cheese. -
5 Broil Skillet and Finish Dish
Transfer pan to hot broiler and broil until cheese melts and browns, 3-5 minutes.
Don't text and broil! Keep an eye on oven as cheese may burn easily under broiler.Carefully remove from broiler. Pan handle will be hot! Use an oven mitt.Plate dish as pictured on front of card, topping skillet with salsa (to taste), sour cream, and tortilla strips. Bon appétit!
