If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes per side.

1 Start the Carrots
In provided tray, combine carrots, 2 tsp. olive oil, 1/4 tsp. salt, and 1/4 tsp. pepper. Spread into an even layer.
Bake uncovered in hot oven, 20 minutes.While carrots bake, continue recipe. -
2 Add the Potatoes and Salmon
Drain potatoes in a colander/strainer.
Pat salmon dry and season flesh side with a pinch of salt and pepper.In a mixing bowl, combine cheese, panko, 1 tsp. olive oil, and a pinch of salt and pepper. Set aside.After 20 minutes, carefully remove tray from oven. Add potatoes to tray and stir to combine. Push vegetables to one side. Tray will be hot! Use a utensil.Place salmon in now-empty side of tray, skin-side down. Top flesh side evenly with mayonnaise, then panko-cheese mixture, pressing gently to adhere. Tray will be hot! Use a utensil. -
3 Make Chive Crema and Finish Meal
Bake again uncovered in hot oven until panko-cheese topping browns, vegetables are tender, and salmon reaches a minimum internal temperature of 145 degrees, 15-20 minutes.
While meal bakes, mince chives.In another mixing bowl, combine creme fraiche, chives, lemon juice, and 1 tsp. water. Stir until smooth and set aside. If too thick, add additional water, 1 tsp. at a time, until desired consistency is reached.Carefully remove tray from oven and stir softened butter into vegetables. Tray will be hot! Use a utensil.To serve, top salmon with chive crema. Bon appétit!
