Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

1 Start the Tomatoes
Prick tomatoes all over with a fork.
In provided tray, combine tomatoes and 1 tsp. olive oil.Bake uncovered in hot oven until tomatoes start to release juices, 5-7 minutes.Carefully remove tray from oven. Using the back of a spoon, gently press tomatoes to break them down.Add pasta, minced garlic and lemon basil, pesto, cream cheese, 2 Tbsp. water, half the Parmesan (reserve remaining for salmon), garlic salt, and a pinch of pepper. Stir to combine. Cream cheese will melt as meal bakes.Push to one side of tray and cover pasta side with foil. -
2 Add the Salmon
Pat salmon dry and season flesh side with a pinch of pepper.
In a mixing bowl, combine panko, remaining Parmesan, 1 tsp. olive oil, and a pinch of salt and pepper.Top flesh side of salmon evenly with mayonnaise. Place salmon, mayonnaise-side down, into panko mixture, pressing gently to adhere. Add salmon, skin-side down, to empty side of tray. -
3 Bake the Meal
Bake half-covered (pasta covered, salmon uncovered) in hot oven until topping browns, pasta is heated through, and salmon reaches a minimum internal temperature of 145 degrees, 15-20 minutes.
Carefully remove tray from oven.To serve, top pasta with salmon. Remove salmon skin and flake, if desired. Bon appétit!
