A note about serious food allergies

This burger is miles beyond the pickle, tomato, lettuce and condiments classic you pick up at fast food joints. First, the pepper jack cheese brings a slight spice, a hint, to the proceedings. But then, a jam of jalapeño and vinegar perfectly balances the patty, with slight heat and slight sweet, and a whole lot of flavor. And what could go on the side but perfectly baked oven fries? This is classic, but beyond.

Customize It Instructions

  • If using 20 oz. ground beef, follow same instructions as 10 oz. ground beef, forming four burgers and stacking two to serve.

  • If using ground turkey, follow same instructions as ground beef in Step 3, cooking until turkey reaches minimum internal temperature, 6-8 minutes per side.

  • If using Impossible burger, follow same instructions as ground beef in Step 3, cooking until heated through, 4-6 minutes per side.

  • If using ground pork, follow same instructions as ground beef in Step 3, cooking until pork reaches minimum internal temperature, 5-6 minutes.

  1. 1

    Bake the Fries

Cut potatoes into 1/4" fries and pat dry.

Place fries on prepared baking sheet and toss with 2 tsp. olive oil, 1/2 tsp. salt, and a pinch of pepper.

Spread into a single layer. Bake in hot oven until golden-brown, 25-30 minutes, carefully tossing once halfway through.

    While fries bake, make jam.

  2. 2

    Make the Jalapeño Jam

Bring a small pot with jalapeño, vinegar, and hot jalapeño jelly to a simmer over medium heat. Once simmering, remove from burner.

Transfer jalapeño jam to a mixing bowl. Let cool, at least 10 minutes.

While jam cools, form and cook patties.

  3. 3

    Form and Cook the Patties

In another mixing bowl, thoroughly combine ground beef and seasoning blend. Form mixture into two evenly-sized patties, about 1/2" thick.

Place a medium non-stick pan over medium-high heat. Add patties to hot pan. Cook until lightly charred and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes per side.

Top with cheese. Cover, and remove from burner. Set aside covered until cheese melts, 30-60 seconds.

Uncover, and remove patties to a plate. Wipe pan clean and reserve.

  4. 4

    Toast the Buns

Return pan used to cook patties to medium-high heat.

Add buns cut side down, to hot, dry pan. Toast until golden-brown, 1-2 minutes.

    Remove from burner.

  5. 5

    Finish the Dish

Plate dish as pictured on front of card, spreading garlic aioli on top bun, and topping bottom bun with burger, jalapeño jam (to taste), arugula, and top bun. Bon appétit!
