Cooking Guidelines

    Prepare The Ingredients

    Drain pineapple and halve pieces.

    Trim zucchini ends, halve lengthwise, and cut into 1/2” half-moons. (Time: :48)

    Cook The Mixture

    Place a medium non-stick pan over medium high heat and add 2 tsp. olive oil. Add pineapple to hot pan and stir occasionally until lightly charred, 2-4 minutes.Add red onion, zucchini, 1/4 tsp salt, a pinch of pepper, and fajita seasoning. Cook 3-4 minutes, Add pulled pork and cook, breaking up meat with a spoon. Add tomato sauce and 2oz of water. Bring to a simmer and stir to combine.

    Cook The Rice

    For best results, pierce brown rice bag a few times with a knife, then break up rice inside the bag. Place Mexican rice in a microwave safe bowl. Cover with a damp paper towel. Microwave until warm, 2 minutes, stirring once halfway through.
