    Assemble The Dish

    Place butternut squash, fajita mix, 1/4 tsp salt and a pinch of pepper in the pan. Toss to combine,

    Top vegetable mixture with pulled pork, then enchilada sauce, and finishing with jack cheese,

    Roast in a hot oven until butternut squash is tender and pork is heated through, 20 minutes.
