Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

If using ground beef, bake uncovered in hot oven until meatloaves reach minimum internal temperature, 25-30 minutes.

If using ground turkey, bake uncovered in hot oven until meatloaves reach minimum internal temperature, 30-35 minutes.

If using Impossible burger, bake uncovered in hot oven until loaves reach a minimum internal temperature of 160 degrees, 28-30 minutes.

1 Prepare the Broccoli
Turn oven on to 400 degrees. Let preheat, at least 10 minutes. Remove all produce from any packaging or constraints, then thoroughly rinse and pat dry. Prepare provided tray with cooking spray.
Using hands, break broccoli into bite-sized pieces.In prepared tray, combine broccoli, 2 tsp. olive oil, and 1/4 tsp. salt. Massage oil and salt into broccoli and push to one side of tray. -
2 Add the Meatloaves
In a mixing bowl, combine ground pork, ricotta, garlic salt, and panko. Form mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height. Place in empty side of tray.
Top meatloaves with chile and cumin rub and 1 tsp. olive oil. -
3 Bake Meal and Make Crema
Bake uncovered in hot oven until broccoli is tender and meatloaves reach a minimum internal temperature of 160 degrees, 28-32 minutes.
While meal bakes, in another mixing bowl, combine sour cream and salsa (to taste) until smooth.Carefully remove tray from oven and top broccoli with shredded cheese.Bake again uncovered in hot oven until cheese melts, 2-3 minutes.Carefully remove tray from oven.To serve, top meatloaf with crema (to taste).
