To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using diced chicken breasts, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes.

If using ground beef, break up until beef reaches minimum internal temperature, 4-6 minutes.

1 Prepare the Ingredients
Remove stem, seeds, and ribs, and cut bell pepper into 1/4" dice.
Halve and peel onion. Cut halves into 1/4" dice. -
2 Cook the Filling
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add bell peppers, onions, and a pinch of salt and pepper to hot pan. Stir often until slightly browned, 2-3 minutes.Add Italian sausage. Break into smaller pieces until no pink remains and sausage reaches a minimum internal temperature of 160 degrees, 4-6 minutes.Add cream cheese and half the marinara (reserve remaining for sauce). Stir constantly until combined, 60-90 seconds.Remove from burner. Transfer filling to a heat-safe mixing bowl. Wipe pan clean and reserve. -
3 Assemble and Toast the Quesadillas
Place tortillas on a clean, flat work surface.
Evenly divide shredded cheese between tortillas, placing on one half.Top shredded cheese with filling, then fold tortillas over filling, pressing gently to adhere.Return pan used to cook filling to medium heat and add 2 tsp. olive oil.Place quesadillas in hot pan (there should be no overlap). Toast until golden-brown, 2-3 minutes per side.Remove from burner.While quesadillas toast, continue recipe. -
4 Make Sauce and Finish Dish
In a microwave-safe bowl, combine remaining marinara, Italian seasoning, 2 Tbsp. water, and red pepper flakes (to taste). Cover with a damp paper towel.
Microwave covered until heated through, 45-60 seconds.Carefully remove from microwave and stir to combine.Plate dish as pictured on front of card, cutting quesadilla into triangles, if desired. Bon appétit!
