To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

Customize It Instructions

If using 16 oz. Italian sausage, follow same instructions as 8 oz. Italian sausage, working in batches if necessary.

If using ground beef, break up until beef reaches minimum internal temperature, 4-6 minutes.

If using ground pork, break up until pork reaches minimum internal temperature, 4-6 minutes.

If using Impossible burger, break up until burger reaches a minimum internal temperature of 160 degrees, 4-6 minutes.

1 Prepare Ingredients and Make Batter
Remove stem, seeds, ribs, and cut bell pepper into 1/2" dice.
Trim and thinly slice green onions.Remove Italian sausage from casing, if necessary.Set aside 2 tsp. corn muffin mix. In a mixing bowl, combine remaining corn muffin mix and 1/4 cup water until batter slightly thicker than pancake batter forms. If too thick, add additional water, 1 tsp. at a time, until desired consistency is reached. Stir in half the green onions (reserve remaining for garnish). Set aside. -
2 Start the Filling
Place a large non-stick pan over medium-high heat and add 1 tsp. olive oil.
Add Italian sausage and bell peppers to hot pan. Break up sausage into smaller pieces until no pink remains and sausage reaches a minimum internal temperature of 160 degrees, 4-6 minutes. -
3 Finish Filling and Assemble Pie
Add reserved corn muffin mix, corn, tomatoes, 2 Tbsp. water, half the pesto (to taste; reserve remaining for crema), and a pinch of salt and pepper to hot pan. Stir often until thoroughly combined, 2-3 minutes.
Remove from burner.Transfer filling to prepared medium oven-safe casserole dish. Spread batter evenly over filling. Sprinkle with cheese. -
4 Bake the Pie
Place casserole dish on prepared baking sheet to catch any drips.
Bake in hot oven until topping is lightly browned and a toothpick inserted into topping comes out clean, 20-25 minutes.Carefully remove from oven. Rest, 5 minutes.While pie bakes, continue recipe. -
5 Make Crema and Finish Dish
Combine sour cream and remaining pesto (to taste) in another mixing bowl.
Plate dish as pictured on front of card, garnishing with remaining green onions and crema (to taste). Bon appétit!
