-
If using antibiotic free chicken, pat dry. Add chicken to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.
-
1 Prepare the Ingredients
Trim green beans, if necessary.
Core tomato and cut into 1/2" dice.Pat chicken dry. Cover chicken with plastic wrap and use a heavy object to pound to an even 1/4" thickness. Season both sides with 1/4 tsp. salt and a pinch of pepper. Gallon bags make clean up easier and are made of thicker plastic. If you don’t have a disposable bag, use plastic wrap. -
2 Coat the Chicken
Combine panko, smoked paprika, and poultry seasoning on a plate. Spread into a single layer.
Place chicken onto plate with panko mixture and flip until coated on both sides, pressing gently to adhere.Place chicken on one side of prepared baking sheet. -
3 Start the Vegetables and Chicken
Place green beans and tomatoes on empty side of sheet. Toss with 1 tsp. olive oil, garlic and parsley seasoning, 1/2 tsp. salt, and a pinch of pepper. Spread into a single layer on their side.
Roast in hot oven, 10 minutes.Chicken will finish cooking in a later step.Carefully remove from oven. -
4 Finish Vegetables and Chicken and Finish Dish
Evenly top chicken with cheese, then bacon. Sheet will be hot! Use caution.
Roast again in hot oven until vegetables are tender and chicken reaches a minimum internal temperature of 165 degrees, 8-10 minutes.Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Carefully remove sheet from oven. Stir softened butter into vegetables until melted and combined.Bon appétit!
