If using antibiotic free chicken breasts, follow same instructions.

1 Prepare Ingredients and Make Buffalo Mixture
Coarsely crush crackers.
Peel, trim, and cut carrot into 1/2" fries.Stem and coarsely chop cilantro.In a mixing bowl, combine Buffalo sauce (to taste) and sour cream. Set aside. -
2 Assemble the Carrots
Place carrots on one half of prepared baking sheet. Toss with 1 Tbsp. olive oil, garlic salt, and a pinch of pepper. Spread into an even layer on their side.

3 Add the Chicken
Pat chicken dry. Season both sides with ranch seasoning and a pinch of pepper.
Evenly top one side of chicken with mayonnaise, crackers, then cheese, pressing gently to adhere.Place chicken on empty side of sheet and spray with cooking spray. -
4 Roast Carrots and Chicken and Finish Dish
Roast in hot oven until carrots are tender and chicken reaches a minimum internal temperature of 165 degrees, 15-20 minutes, stirring carrots halfway through.
Carefully remove from oven.To serve, top chicken with Buffalo mixture (to taste) and garnish carrots with cilantro. Serve dressing on the side for dipping. Bon appétit!
