Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using diced chicken breasts, pat dry. Add chicken to a medium non-stick pan with 2 tsp. olive oil over medium heat. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes.

    Prepare Ingredients and Make Lemon Crema

    Stem and mince dill.

    Zest lemon, halve, and juice.

    In a mixing bowl, combine creme fraiche, 1 tsp. lemon juice, 2 tsp. olive oil, 1 Tbsp. water, half the dill (reserve remaining for squash), and a pinch of salt. Set aside.

    Pat shrimp dry and season all over with za'atar seasoning.

    Assemble the Shrimp and Yellow Squash

    Trim and halve yellow squash lengthwise. Cut into 1/4” half-moons.

    Place yellow squash on one half of prepared baking sheet. Toss with half the garlic salt (remaining is yours to use as you please!), 1 tsp. olive oil, and a pinch of salt and pepper. Spread into an even layer on their side.

    Place shrimp on empty side of sheet and spread into an even layer.

    Roast the Yellow Squash and Shrimp

    Roast in hot oven until yellow squash is tender and shrimp reach a minimum internal temperature of 145 degrees, 10-15 minutes.

    Carefully remove sheet from oven and drain any excess liquid. Sheet will be hot! Use caution.

    Stir half the softened butter (reserve remaining for rice) and remaining dill into yellow squash until combined. Sheet will be hot! Use a utensil.

    While yellow squash and shrimp roast, continue recipe.

    Heat Rice and Finish Dish

    Carefully massage rice in bag to break up any clumps and remove from packaging.

    In a microwave-safe bowl, combine rice and 1/4 tsp. salt. Microwave uncovered until heated through, 2-3 minutes.

    Carefully remove from microwave. Rest, 2 minutes.

    Stir in remaining softened butter, lemon zest, and almonds until combined. Fluff rice with a fork.

    To serve, top shrimp with lemon crema and pine nuts. Garnish yellow squash with cheese. Bon appétit!
