preheat oven to 400 degrees.
slice potatoes into ¼" rounds.
in a medium mixing bowl season potatoes with 1 tsp olive oil, a pinch of salt and pepper and garlic salt.
place potatoes in a single layer onto a prepared sheet tray.
top potatoes with shredded white cheddar.
bake for 14-16 minutes
garnish potatoes with chives.
place medium non stick pan over medium-high heat.
green beans, ¼ cup water and ¼ tsp. salt.to hot pan.
cover and allow to cook until beans are bright green and tender and water is gone, 4-6 minutes.
steak and sauce
season steak with a pinch of salt and pepper.
add 1 tsp evoo to a medium non stick and place over medium high heat.
once hot sear steak for 4-5 minutes per side.
transfer steaks to plate and use pan to make sauce.
reduce heat to medium and add bacon, vinegar, 2 Tbsp of water, and demi.
bring to a simmer and reduce liquid by half, 2 minutes.
stir in butter.
