    Prepare the Ingredients

Mince chives. Slice potatoes into ¼" rounds. Trim ends off green beans. Pat steaks dry, and season both sides with a pinch of salt and pepper.

  2. 2

    Roast the Potatoes

Place potato rounds on prepared baking sheet and toss with 1 tsp. olive oil, garlic salt, and a pinch of salt and pepper. Massge oil and seasoning into potatoes. Spread into a single layer and top with cheese. Bake in hot oven until tender, 14-16 minutes. While potatoes roast, cook grean beans.

  3. 3

    Cook the Green Beans

Place medium non-stick pan over medium-high heat. Add green beans, ¼ cup water, and ¼ tsp. salt to hot pan. Cover, and stir occasionally until green beans are bright green and tender and water is evaporated, 4-6 minutes. If green beans need more time, add 2 Tbsp. water and stir occasionally, 1-3 minutes While green beans cook, cook steaks.

  4. 4

    Cook the Steaks

Place a medium non-stick pan over medium heat and add 1 tsp. olive oil. Add steaks to hot pan and cook until browned and steaks reach a minimum internal temperature of 145 degrees, 5-7 minutes per side. Transfer steaks to a plate and rest, 3 minutes. Keep pan over medium heat.

  5. 5

    Cook Sauce and Finish Dish

Add bacon, vinegar, 2 Tbsp. water, and demi-glace to hot pan. Bring to a simmer. Once simmering, cook until liquid is reduced by half, 2-3 minutes. Remove from burner and stir in butter.
