Before You Cook
Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

1 Start the Poblanos
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Wash hands thoroughly with soap and warm water before cooking, and after handling raw meat. Remove all produce from any packaging or constraints, then thoroughly rinse and pat dry.
In provided tray, combine poblanos (to taste) and 1 tsp. olive oil. Spread into an even layer.Bake uncovered in hot oven, 10 minutes.While poblanos bake, continue recipe. -
2 Add the Sweet Potatoes and Chicken
Pat chicken dry and season both sides with barbeque seasoning (use less if spice-averse).
Crush pepitas in shipping bag.Carefully remove tray from oven. Add sweet potatoes and garlic salt to tray. Stir vigorously to combine and push to one side of tray. Tray will be hot! Use a utensil.Top sweet potato mixture with crushed pepitas and cheese.Transfer chicken to now-empty side of tray. -
3 Bake the Meal
Bake again uncovered in hot oven until chicken reaches a minimum internal temperature of 165 degrees, 20-25 minutes.
While meal bakes, crush crispy onions in shipping bag.Carefully remove tray from oven. Drain any excess liquid. Tray will be hot! Use a utensil.To serve, top chicken with BBQ sauce and crispy onions. Bon appétit!
