Before You Cook
Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

Prepare the Ingredients
Cut sweet potato into 1/2" cubes.
Drain and rinse beans.Halve and peel onion. Cut halves into 1/2" dice. -
Start the Vegetables
Place sweet potatoes and onions on prepared baking sheet. Top with 1 Tbsp. olive oil, fiesta seasoning, 1/4 tsp. salt, and 1/4 tsp. pepper. Massage oil and seasonings into vegetables.
Roast in hot oven until browned and tender, 12-15 minutes. -
Add the Beans and Corn
Carefully remove from oven. Add beans and corn to sheet with vegetables and season with 1/4 tsp. salt. Stir to combine. Baking sheet and vegetables will be hot! Use a utensil.
Roast again in hot oven until heated through, 5-7 minutes.Carefully remove from oven. -
Assemble the Quesadillas
Wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds.
If tortillas come folded, keep folded.Carefully remove from microwave.Place tortillas on a clean work surface. Divide half the cheese between tortillas, placing on one side. Top with vegetable mixture, then remaining cheese. Add filling to taste; you may have some leftover.Fold tortilla over filling and press gently to adhere.Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil. Working in batches if necessary, add quesadillas to hot pan (there should be no overlap). Cook until golden-brown, 1-2 minutes per side.Remove from burner. -
Make Crema and Finish Dish
In a mixing bowl, combine half the salsa (to taste; remaining is yours to use as you please!) and yogurt. Set aside.
Plate dish as pictured on front of card, cutting quesadilla into smaller pieces, if desired, and serving with crema and guacamole (to taste). Bon appétit!
