1 Start the Turkey and Vegetables
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Wash hands thoroughly with soap and warm water before cooking, and after handling raw meat and seafood. Remove all produce from any packaging or constraints, then thoroughly rinse and pat dry.
Evenly divide turkey, mixed peppers, onions, 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper between both trays.Bake both trays uncovered in hot oven, 10 minutes. While turkey and vegetables bake, drain and rinse beans. -
2 Assemble the Chili
After 10 minutes, carefully remove trays from oven. Drain any excess liquid. Evenly divide tomato sauce, 1/2 cup water, beans, mirepoix base, corn, and taco seasoning between both trays. Stir to combine. Trays will be hot! Use a utensil.
-
3 Bake the Meal
Bake both trays uncovered in hot oven until vegetables are tender and turkey reaches a minimum internal temperature of 165 degrees, 10-15 minutes.
Carefully remove trays from oven.To serve, top chili with tortilla strips and cheese. Bon appétit!
