Recipe Steps

    Prepare the Ingredients

    Preheat oven to 400 degrees. Remove lid and label, if necessary. When ingredient appears in recipe, remove from packaging. Throughly rinse any fresh produce and pat dry. Combine rice, edamame, fajita mix, soy sauce, coconut flakes, 2 Tbsp. water, and a pinch of salt and pepper in provided tray. Spread into an even layer.

    Add the Shrimp

    Top rice with shrimp in a single layer. If using 16 oz shrimp or jumbo shrimp, follow same instructions.

    Bake the Dish

    Bake uncovered in hot oven until shrimp reaches a minimum internal temperature of 145 degrees, 18-20 minutes. If using 16 oz shrimp or jumbo shrimp, follow same instructions. Tent dish with foil if browning too quickly. Carefully remove from oven and garnish with sweet chili sauce and peanuts. Bon appétit!
