    Cook The Steak Mixture

Separate steak strips into a single layer and pat dry.

Place a large non-sick pan over medium-high heat and add 1 tsp. olive oil Add steak strips to pan. Stir occasionally until no pink remains and steak strips reach a minimum internal temperature of 145 degrees, 4-6 minutes. Transfer to a plate. Reserve pan; no need to wipe clean.

    Make a cornstarch slurry.

In the same pan over medium high heat, add 1 tsp olive oil, bok choy stems, mushrooms, and shallot. Cook for 2-3 minutes. Add bok choy tops, teriyaki sauce, and garlic and cook 1 minute. Add slurry and bring to simmer. Cook until thickened, 1-2 minutes. Remove from heat and stir in steak strips. Transfer to a plate. Reserve pan; wipe clean.
