If using diced chicken thighs, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes. Don't worry about trimming. Excess fat will render while cooking and add flavor.

If using shrimp, pat dry. Cook until pink and shrimp reach minimum internal temperature, 2-3 minutes per side.

1 Cook the Vegetables
Trim snow peas, if desired.
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.Add bell peppers, snow peas, 1/4 tsp. salt, and a pinch of pepper to hot pan. Stir occasionally until tender, 6-8 minutes.Transfer vegetables to a plate. Keep pan over medium-high heat; no need to wipe clean. -
2 Cook the Chicken
Add 1 tsp. olive oil, garlic salt, and chicken to hot pan. Stir occasionally until golden-brown and chicken reaches a minimum internal temperature of 165 degrees, 5-7 minutes.

3 Add the Sauce and Vegetables
In a mixing bowl, whisk together peanut butter and 1/4 cup warm water.
Add soy sauce and yuzu to peanut butter mixture and stir to combine.Add sauce mixture and vegetables to hot pan with chicken and stir until warmed through and chicken and vegetables are coated, 2-3 minutes.Remove from burner. Cover and set aside to keep warm. -
4 Heat Rice and Finish Dish
Carefully massage rice in bag to break up any clumps. Remove rice from packaging. Place rice in a microwave-safe bowl.
Microwave uncovered until heated through, 3-4 minutes.Carefully remove from microwave. Rest, 2 minutes.Fluff rice with a fork and season with 1/4 tsp. salt.While rice microwaves, crush peanuts in shipping bag.Stem cilantro and reserve whole leaves.Plate dish as pictured on front of card, garnishing chicken and vegetables with peanuts and cilantro.
