    Make the Salad

    Thoroughly rinse produce and pat dry.

    Trim cucumber and thinly slice into rounds.

    Hold romaine heart at root end and chop coarsely.

    Place chicken in a microwave-safe bowl. Microwave until warm, 1-2 minutes.

    Place romaine, chicken, slaw mix, cucumbers, and cashews in a bowl and toss with dressing. Garnish with pineapple and crispy rice noodles. Bon appétit!
