Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground beef, bake uncovered in hot oven until meatloaves reach minimum internal temperature, 25-30 minutes.

If using Impossible burger, bake uncovered in hot oven until loaves reach a minimum internal temperature of 160 degrees, 28-30 minutes.

1 Start the Cauliflower
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Remove all produce from any packaging or constraints, then thoroughly rinse and pat dry.
Using hands, break cauliflower into 1" pieces.In provided tray, combine cauliflower, 2 tsp. olive oil, garlic salt, and a pinch of pepper.Bake uncovered in hot oven until cauliflower begins to brown, 6-8 minutes.While cauliflower bakes, continue recipe. -
2 Add the Meatloaves
In a mixing bowl, combine ground turkey, panko, mayonnaise, and ranch seasoning. Form turkey mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height.
After 6-8 minutes, carefully remove tray from oven and push cauliflower to one side. Transfer meatloaves to now-empty side of tray and top evenly with bacon, pressing gently to adhere. -
3 Bake Meal and Make Cheese Sauce
Bake again uncovered in hot oven until meatloaves reach a minimum internal temperature of 165 degrees, 20-25 minutes.
While meal bakes, in a microwave-safe bowl, combine 3/4 the shredded cheese (reserve remaining for garnish), cream cheese, and 1/4 cup water.Microwave uncovered until cream cheese melts, 35-45 seconds.Carefully remove cheese sauce from microwave and stir until smooth.Carefully remove tray from oven and transfer meatloaves to a plate. Drain any excess liquid from tray and add cheese sauce to tray with cauliflower. Stir until cauliflower is coated. Tray will be hot! Use a utensil.To serve, garnish meatloaf with remaining shredded cheese. Bon appétit!
