To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon or sirloin steaks, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using salmon, pat dry. Cook, skin-side up first, in a medium non-stick pan with 2 tsp. olive oil over medium heat until salmon reaches minimum internal temperature, 4-6 minutes per side.

1 Start the Green Beans
Trim green beans, if necessary.
Place green beans and 1/4 cup water in a microwave-safe bowl. Cover with a damp paper towel.Microwave covered until slightly tender, 5-7 minutes.Carefully remove from microwave and drain any excess liquid.Transfer green beans to provided tray and toss with 2 tsp. olive oil, garlic pepper, and a pinch of salt. Push to one side of tray. Wipe bowl clean and reserve. -
2 Add Pork and Bake Meal
Pat pork medallions dry and season all over with 1 tsp. olive oil, garlic and parsley seasoning, and 1/4 tsp. salt.
Place pork medallions in empty side of tray.Bake uncovered in hot oven until green beans are tender and pork medallions reach a minimum internal temperature of 145 degrees, 14-16 minutes.Medallion thickness can vary; if you receive a thinner medallion, we recommend checking for doneness sooner.Carefully remove from oven. Rest, 3 minutes.While meal bakes, continue recipe. -
3 Make Crema, Assemble Salad, and Finish Meal
In reserved microwave-safe bowl, combine butter and creme fraiche.
Microwave uncovered until butter is melted, 10-15 seconds.Carefully remove from microwave. Stir in a pinch of pepper and 1 tsp. water until combined.If too thick, add additional water, 1 tsp. at a time, until desired consistency is reached.Coarsely crush walnuts.In a mixing bowl, combine arugula, cheese, walnuts, balsamic vinaigrette (to taste), and a pinch of salt and pepper.To serve, top pork medallions with crema. Bon appétit!
