Roast the Sweet Potatoes
Peel and cut sweet potato into 1" dice.
Place potatoes on prepared baking sheet and toss with 1 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Massage oil and seasoning into potatoes.Spread into a single layer and roast in hot oven until tender, 18-20 minutes. -
Prepare the Ingredients
Mince cilantro, leaves and stems.
Stem jalapeño, halve, seed, remove ribs, and mince. Wash hands and cutting board after working with jalapeño. -
Make the Salsa
Place a small pan over medium-high heat. Add 1/2 tsp. olive oil, corn, and jalapeño (to taste) to hot pan.
Stir often until lightly browned, 2-3 minutes.Remove from burner. Transfer corn and jalapeño to a mixing bowl and stir in cilantro and a pinch of salt and pepper. -
Cook the Filling
Place a large non-stick pan over medium-high heat.
Add ground beef and seasoning blend to hot pan. Break up meat until no pink remains and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes.Stir in sweet potatoes and beef demi-glace until combined. Remove from burner. -
Finish the Dish
Wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds.
Plate as pictured on front of card, filling tortillas with filling and salsa and topping with sour cream and cheese. Bon appétit!
