cut onion in half and slice 1/8th inch thick slices, julienne
stem and seed pepper, cut into strips 1/4 inch thickcrush crispy onions -
2 cooking the filling
In a large non stick pan heat 1 t olive oil over medium heat and add peppers and onions with 1/4 t salt
saute for 5 minutes, until tenderremove from pan, place back on medium high heat and add 2 t olive oiladd steak strips and blackening spicebrown for 2-4 minutesadd peppers and onions back to pan with demi, 2T water and buttercook down until reduced by 3/4 and sauce thickens -
3 toast tortilas
while the steak mixture cooks wrap tortillas in foil and place in oven at 400 degrees for 5 minutes, until warm and pliable
