To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

cut onion in half and slice 1/8th inch thick slices, julienne
stem and seed pepper, cut into strips ¼ inch thick

In a large non stick pan heat 1 t olive oil over medium heat and add peppers and onions with ¼ t salt
saute for 5 minutes, until tender
remove from pan, place back on medium high heat and add 2 t olive oil
add steak strips and blackening spice
brown for 2-4 minutes
add peppers and onions back to pan with demi, 2T water and butter
cook down until reduced by ¾ and sauce thickens
while the steak mixture cooks wrap tortillas in foil and place in oven at 400 degrees for 5 minutes, until warm and pliable
