To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using shrimp, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until pink and shrimp reach minimum internal temperature, 2-3 minutes per side.

1 Start Peppers and Prepare Ingredients
Spray both provided trays with cooking spray.
Evenly divide mixed peppers between both provided trays. Add 1 tsp. olive oil to each tray and stir to combine.Bake both trays uncovered in hot oven, 5 minutes.While peppers bake, trim and thinly slice green onions.Pat chicken dry. Season all over with half the Cajun seasoning (use less if spice averse; reserve remaining for chicken mixture) and half the garlic salt (reserve remaining for chicken mixture). Kids not a fan of extra heat? Feel free to skip/reduce the Cajun seasoning. -
2 Add Chicken and Corn and Bake Meal
After 5 minutes, carefully remove trays from oven. Evenly divide chicken, bacon, corn, 2 tsp. olive oil, tomato puree, vegetable base, remaining garlic salt, and remaining Cajun seasoning (use less if spice-averse) between both trays. Stir to combine. Trays will be hot! Use a utensil. Kids not a fan of extra heat? Feel free to skip/reduce the Cajun seasoning.
Bake both trays uncovered in hot oven, 10 minutes.Chicken will finish cooking in a later step.Carefully remove from oven. -
3 Add Rice, Make Crema, and Finish Meal
Carefully massage rice in bag to break up any clumps and remove from packaging.
Evenly divide rice between both trays and stir to combine. Trays will be hot! Use a utensil.Bake both trays again uncovered in hot oven until rice is heated through and chicken reaches a minimum internal temperature of 165 degrees, 10-15 minutes.While meal bakes, in a mixing bowl, combine sour cream and hot sauce (to taste). Kids not a fan of extra heat? Feel free to skip/reduce the hot sauce. Set aside.Carefully remove trays from oven.To serve, top dirty rice with green onions and garnish with crema (to taste).
